Recipe: Dessert: Soft Crepes



Should've made a better presentation of the goods but couldn't 'cause I was too hungry and the ice cream was melting. XD

Made this a couple of days ago for my sisters. It's already good without any filling, my sisters ate just as is but I prefer to eat it with ice cream.

Portion: 18-20

Ingredients

1. 4 eggs
2. 1/2 cup butter, melted
3. 1/3 sugar
4. 1 cup flour
5. 1 cup milk
6. 1/4 cup water
7. 1 tsp vanilla
8. dash of salt

Direction:

1. Mix all ingredients in blender except flour. Blend. Sprinkle in flour, blend. Refrigerate for 1 hour.
2. Remove and blend for about a minute. Heat 8 inch skillet. Butter pan 1/2 tsp. 
3. Pour 1/4 cup of batter, thin layer. 
4. Cook for about 30 seconds/ or until edges lifted easy by spatula. flip. Cook again. 
5. Use wax paper between crepes. (Although, maybe because I used too much butter for the pan, the wax paper was unnecessary because the crepes didn't stick together)

Super duper yummy and easy to make!!!

Day 15: Mood Journal

General Mood: I want to say happy but again as I said before, happy is a state of mind for me, a momentary feeling and not a state being. So I think today, I'm feeling all right.

Today had no drama and the like. Everything was pretty good actually. It's my fourth day of SHARKWEEK and the headaches and back pains are gone, the cramps are few and far in between. But I do still feel unusually cold. My blood circulation isn't good apparently.

Anyway, I have finished listing endorsements that my readers have given me, have written blurb and sent the cover JPG, I only need to finish acknowledgements. Hopefully I'll finish it by tonight.

I haven't been baking in a while and I miss it. So, after searching for recipes, I found this:

PEANUT BUTTER BREAD


Ingredients

2 cups all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1 egg
1 cup milk
3/4 cup peanut butter
Grape jelly, optional

Directions
In a bowl, combine the flour, sugar, baking powder and salt. Add egg, milk and peanut butter; stir just until combined. Pour into a greased 8-in. x 4-in. loaf pan.
Bake at 350° for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Serve with jelly if desired.

Yield: 1 loaf.

Looks simple enough and we have all the ingredients in he house already...except the egg. I can buy that from the store near the house. But will have to wait for tomorrow.

I don't know what it is about baking, maybe it's a nesting thing since I have reached 'that age', maybe because it reminds me of when I was a kid coming home to the sound of my mom's mixer, and of trying to wheedle my mom so I can lick the stuffing or the icing or whatever.

My mom used to be a great cook and had taken orders to get some money on the side.

Going home to the smell of something fragrant and sweet baking in the oven was kind of a great childhood memory for me.

It's funny how it's always the little things you remember.

Recipe: Banana Bread with Apple Sauce


Since people have asked, I will write down the banana bread recipe that I have. It's really easy to make and very yummy. 

First, let's go with the banana bread!

Ingredients: 


(baking is a messy business)
  • 3 or 4 ripe bananas, smashed (make sure it's the kind of bananas that are sweet when cooked)
  • 1/3 cup melted butter (make sure it has cooled down before use)
  • 1 cup sugar
  • 1 egg beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • A pinch of salt
  • 1 1/2 cups of all-purpose flour
Method:

  • Preheat oven to 175 C
  • Mix butter with mashed bananas
  • Mix sugar, egg, vanilla. Then sprinkle baking soda, salt and mix it in. Add flour last.
  • Pour mixture into buttered 4x8 loaf pan.



  • Bake for 1 hour ( or until you insert a toothpick in it and nothing sticks)

See? It's SUPER EASY.

Apple Sauce

Ingredients: 

  • 1 or 2 medium size apples (I used Fuji because, well, it tastes good and when cooked doesn't change its taste)
  • Sugar as needed
  • Water as needed
  • Brown sugar as needed
  • Cinnamon as needed
Method:

  • Core and peel apples, cut into cubes.
  • Put into mixer (occasionally splash water)
  • Heat a pan and pour it inside, stir, add sugar and brown sugar and cinnamon as needed (until it is as sweet as you want)
  • Turn off stove and let it cool. 
  • Afterwards put it into a jar and store in a fridge or room temperature. 

EASY PEASY AND SO YUMMY. 



 In my house, it didn't even last A DAY.

At night we, and by we I mean me, cooked Cheese Chicken enchiladas.
